I’ve saved the best for last (at least, in my opinion!). This was the third and final recipe used in Katie’s baking workshop this month, and it was to die for. I found myself snacking on it raw at home – you just know it’s a good recipe when it can be enjoyed before it’s even cooked 😉

Warm Apple Cobbler

Serves: 9x13 dish
Ingredients
  • APPLE BOTTOM
  • 13 apples baking/green/granny smith
  • ¼ cup sugar
  • ¼ cup brown sugar
  • ¼ tsp ginger
  • ⅛ tsp cloves
  • ¼ tsp nutmeg
  • ½ tsp cinnamon
  • ¼ cup honey
  • ¼ cup apple cider
  • 1½ Tbsp lemon juice
  • 6 Tbsp butter
  • TOPPING
  • 2¼ cups flour, pastry or all purpose
  • ¾ cup sugar
  • ½ tsp salt
  • ¼ tsp baking powder
  • ¾ cup butter
  • ¾ cup oats
  • 6 Tbsp cream
Method
  1. Butter and flour a 9x13 dish. Chill.
  2. Toss apples, spices, honey, lemon juice and sugars.
  3. Pour into baking dish. Top with butter pieces.
  4. Bake 350F for 30 minutes. Cool.
  5. Mix topping ingredients all together.
  6. Pour topping onto baked apples.
  7. Bake 375F for ~45 minutes.
  8. Cool 15-30 minutes before serving (to set).
